Bite Size Crisp Oatmeal Cookie Sandwiches

Crispy Oatmeal Cookie Sandwiches

I’d like to think I’m a rather giving person.  Except when it comes to sharing my cheesecake.  Or Diet Coke.  Or chocolate.  And, on occasion, the warm down comforter on my bed.  Golly gee Beave that list sure is long.  And terribly lacking in veggies if I do say so myself.

Despite my *ahem* few weaknesses I do actually love to share and when I get an opportunity to share my food I very willingly oblige.  Lately my skills in the kitchen have succumbed to working full time, summer activities and a sudden urge to play Candy Crush every waking moment of every day to escape the utter exhaustion that is being a single mom. Whew.

I do get moments now and again to get my swagger on.  I first created the recipe for these bite size Crisp Oatmeal Cookie Sandwiches a couple of years ago and they are perfect for an after school snack.  Although, there’s no shame in making them for a “during school” snack either.

I ate my fair share but I’m happy to report that I didn’t eat all of them {even though I could have easily added them to my list of weaknesses}.
